Slow-roasted rabbit and phesant in a robust broth with aromatics, served with fried okra cornbread
Boar Prosciutto Salad
Thin-sliced boar proscuitto over a blend of arugula and radicchio lettuce with black pepper and herbed goat cheese, fresh figs, roasted candy cane beets, and dressed with orange champange vinigrette
Smoked Trout “Chowder”
Crispy, seared, skin-on rainbow trout over a reduced cream sauce, aloft pork lardons, leeks, fingerling potatoes, and smoked trout
Wildberry and Lemon Sorbet
Carlic and thyme-rubbed elk tenderloin topped with a chia port reduction over potato and root vegetable hash and finished with friend brussel sprout leaves
Pear and Pecan Duck
Grilled and lightly smoked brown sugar pears over maple bourbon pecan ice cream with crispy, maple black pepper duck bacon, garnished with a delicate pecan truile
